I’m absolutely obsessed with squid. It is incredibly high in that allimportant selenium, alongside good amounts of zinc, which supports immune health. This is great served in a salad, with a few rocket (arugula) leaves as a starter, or even with some cooked quinoa.

Ingredients

Quantity Ingredient
olive oil, for oiling
2-3 prepared squid tubes

For the spice mix

Quantity Ingredient
1/4 teaspoon ground cinnamon
1/4 teaspoon smoked paprika
1/4 teaspoon ground cumin
1/4 teaspoon garlic granules
sea salt
black pepper

Method

  1. Mix the spices together in a small bowl, with salt and pepper to taste.
  2. Lightly oil a griddle pan and place over a high heat until hot.
  3. Sprinkle a good coating of the spice mix onto each side of the squid tubes. Lay the squid gently in the hot pan and cook for 1–2 minutes, then turn and repeat on the other side before serving hot.
