Venison sausage and rosemary stew with sweet potato mash

This makes an incredibly nutrient-dense, filling and low-GI family dinner.

Ingredients

Quantity Ingredient
olive oil, for cooking and drizzling
2 red onions, finely sliced
2 cloves garlic, finely chopped
6 slices streaky bacon, cut into small pieces
2 star anise
12 venison sausages
3 bay leaves
2 large sprigs rosemary
1 teaspoon smoked paprika
1-2 x 400g can chopped tomatoes
200ml chicken stock
1 tablespoon light soy sauce
100ml red wine
1 x 400g can chickpeas, drained
2 large sweet potatoes, peeled and diced
sea salt
black pepper

Method

  1. Preheat the oven to 180°C.
  2. Heat a little olive oil in a large frying pan, add the onions, garlic, bacon, star anise and a pinch of salt and sauté until the onion is beginning to soften. Prick the sausages, add to the pan and continue to sauté until the sausages start to brown. Transfer everything to a casserole dish and stir in the bay leaves, rosemary, paprika, tomatoes, stock, soy sauce, red wine and chickpeas (garbanzo beans).
  3. Place the lid on the dish and bake for 40–50 minutes, checking occasionally; you want the liquid to have reduced to a thick sauce and the flavours to have intensified.
  4. While the casserole is cooking, boil the diced sweet potato until soft. Drain, then add a small drizzle of olive oil and some salt and pepper, and mash well.
  5. Serve the casserole with a generous dollop of mash.
