Wasabi salmon with courgette, carrot and sesame stir-fry

Salmon and wasabi are pretty much a match made in heaven. Being a sushi obsessive myself, I particularly love this pairing.

Ingredients

Quantity Ingredient
2 teaspoons wasabi paste
2 teaspoons honey
2 teaspoons light soy sauce
2 salmon fillets
1 large carrot
1 large courgette
1 tablespoon olive oil
2 teaspoons toasted sesame oil
2 tablespoons sesame seeds

Method

  1. Preheat the oven to 180°C
  2. Mix the wasabi, honey, soy sauce, and 1 teaspoon water together to make a sauce.
  3. Put the salmon on an oiled, foil-lined baking sheet and top with the sauce. Bake for 25 minutes.
  4. Using a vegetable peeler, slice down the carrot and courgette (zucchini) to create ribbons. Do this for the whole carrot and courgette so as to make a type of pasta or noodle alternative.
  5. Heat the olive oil in a pan or wok. Add the carrot and courgette and stirfry until beginning to soften. Add the sesame oil and sesame seeds.
  6. Serve each baked salmon fillet on top of the stir-fried courgette and carrot ribbons.
