This is great for giving the immune system a kick in the whatsits, as it’s full of some seriously powerful ingredients. I often make it with tamarind paste, but that’s not always easy to come by, so it’s fine to leave it out. Much better than a takeaway!

Ingredients

Quantity Ingredient
125g flat rice noodles
olive oil, for cooking
1 red onion, halved and sliced
2 spring onions
2 garlic cloves, finely chopped
1 red chilli, finely chopped, seeds left in
75g shiitake mushrooms, sliced
1 lime, juiced
2 teaspoons tamarind paste, (optional)
2 teaspoons fish sauce
2 teaspoons soy sauce
2 teaspoons runny honey
handful salted peanuts
small bunch fresh coriander, roughly chopped
sea salt

Method

  1. Put the rice noodles in a bowl and cover with hot water. Leave to soften – this usually takes around 15 minutes.
  2. Meanwhile, heat a little olive oil in a wok or large pan, add the red onion, spring onions, garlic and chilli and stir-fry for 3–4 minutes, until soft and translucent. Season with salt. Add the shiitake mushrooms and continue cooking until they have softened.
  3. Drain the noodles and add them to the pan. Stir well and reduce the heat. Add the lime juice, tamarind (if using), fish sauce, soy sauce and honey, and mix thoroughly. Tip on to a plate and garnish with the peanuts and coriander. Serve immediately.

Clever combination:

  • This is an awesome dish if you are feeling a tad run down or feel the first signs of a cold. The combination of antiviral garlic, white blood-cell stimulating shiitake and decongestant chilli will give you a helping hand.
