This is the ultimate in easy, light dinners. It’s the perfect solution to those days when you have literally dragged yourself home, and just need something quick, with very little to think about or do. If you like, you can even replace the houmous with the shop-bought kind for the quickest of meals.

Ingredients

Quantity Ingredient
400g tinned cannellini beans, drained
1 garlic clove, crushed
1/2 lemon, juiced
4 tablespoons olive oil
2 slices multi-seed bread
1 handful baby spinach leaves
2 plum tomatoes, finely chopped
sea salt
black pepper

Method

  1. Place the drained beans, garlic, lemon juice and olive oil in a blender or food processor, season with salt and pepper and blitz into houmous-like purée.
  2. Toast the bread. Top with the baby spinach first, then the houmous, then the chopped tomatoes. Serve immediately.

Good for:

  • Immune system; constipation; anxiety and stress

Clever combination:

  • Houmous is one of those dishes that’s a great weapon in your arsenal for when you’ve pushed yourself too far or are feeling run down, and your immune system needs support. The garlic in it contains antiviral volatile oils, and beans are a great source of zinc, which is used by white blood cells to regulate their activity.
