Skin-boosting seafood one-pot

I have some good friends to thank for this one, as they made a dish like this at a dinner party once. I’ve played around with it a bit and it’s become a household favourite. It’s perfect on its own as a light dinner, or can be served with cooked quinoa and a side salad for something more substantial.

Ingredients

Quantity Ingredient
olive oil, for cooking
1 large red onion, finely chopped
2 garlic cloves, finely chopped
500g tomato passata
1 skinless salmon fillet, diced into 2 cm chunks
2 large fresh squid tubes, cut into 1 cm rings
150g raw prawns, (shelled weight)
3 handfuls baby spinach
2 tablespoons green olives, chopped
sea salt
black pepper

Method

  1. Heat a little olive oil in a pan, add the onion and garlic and cook for 4–5 minutes, or until the onion has softened. Add the passata and simmer for 3–4 minutes.
  2. Add the salmon and simmer for 4–5 minutes, then add the squid and prawns and cook for a further 2–3 minutes, until all the seafood is cooked through. Add the spinach and olives, season with salt and pepper and cook for 2 more minutes, or until the spinach has wilted. Serve immediately.

Star ingredient:

  • Prawns are an excellent source of the antioxidant mineral selenium. This is used by the body to manufacture an enzyme called glutathione peroxidase, which helps break down and remove waste materials.
