Kale chips are a surefire winner, great for stopping you reaching for the crisps.

Ingredients

Quantity Ingredient
200g raw curly kale
olive oil, for drizzling
1 garlic clove, finely chopped
1 small red chilli, finely chopped
1 teaspoon runny honey
2 teaspoons soy sauce
1 tablespoon natural crunchy peanut butter
1/2 teaspoon chinese five-spice powder
sea salt

Method

  1. Preheat the oven to 180°C. Remove the kale stalks and put the leaves in a bowl. Drizzle over a little olive oil and season with salt. Massage so that the leaves soften and wilt.
  2. Mix the rest of the ingredients with 2 teaspoons water to make a rich sauce. Coat the kale leaves with the sauce.
  3. Place on a baking tray and bake for 15–20 minutes, until crispy and crunchy. Remove and let cool, then store in an airtight container.

Good for:

  • High blood pressure and high cholesterol; healthy gut flora and constipation; muscle function

Star ingredient:

  • Kale is bursting with magnesium, which is an important nutrient in reducing blood pressure, as it encourages the relaxation of blood vessel walls.
