This is a great snack that’s perfect when you just want to reach into the fridge, grab something yummy and run. It really does have a chocolate fudge vibe going on.

Ingredients

Quantity Ingredient
120g white sesame seeds
60g cocoa powder
3 tablespoons maple syrup
1 tablespoon coconut oil, plus extra for greasing

Method

  1. Toast the sesame seeds lightly in a pan until golden brown, then remove and leave to cool. Place them in a small food processor and process on full speed until they start to break down and a dough-like texture is beginning to form. This may take a few minutes, but stick with it. Add the rest of the ingredients and process until combined.
  2. Grease a 20 cm square baking tin lightly with coconut oil and add the sesame-cocoa mixture. Push down to fill the tin, making sure it is well compressed. Place in the fridge and chill for 5–6 hours, until firm. Cut into 2 cm squares. Store in an airtight container in the fridge.

Star ingredient:

  • Sesame seeds are packed with zinc, selenium, calcium and even iron. They also contain betasitosterol, which has been shown to deliver a cholesterol-lowering action.
