When you need a little snack that’s bursting with virtue, these are super-easy and can be assembled in minutes.

Ingredients

Quantity Ingredient
200g pitted kalamata olives
2 tablespoons olive oil
150g sun-dried tomatoes
50g feta cheese
1/2 cucumber
sea salt
black pepper

Method

  1. To make the first topping, put the olives and half the olive oil in a food processor and blitz slowly to make a coarse paste. Season with salt and pepper if needed.
  2. To make the second topping, put the sun-dried tomatoes, feta cheese and remaining olive oil in the food processor and blitz at high speed to make a smooth, pâté-like texture. Season with salt and pepper if needed.
  3. Slice the cucumber and top each slice alternately with the different toppings.

Star ingredient:

  • Olives have many health benefits, especially for the cardiovascular system. They’re very rich in a fatty acid called oleic acid, which is known to improve good cholesterol ratios and reduce blood pressure. They can also reduce histamine-mediated inflammatory episodes by interfering with the activity of histamine receptors and some inflammatory mediators. They deliver antioxidant benefits, too.
