Avocado, lime and coconut crumble pots

These make for a beautifully refreshing and very virtuous little dessert or guilt-free snack at any time of day.

Ingredients

Quantity Ingredient
2 large, very ripe avocados
2 limes, zested and juiced
3 tablespoons coconut oil, melted
3 teaspoons honey or agave nectar
1 teaspoon desiccated coconut
8 low-sugar oat biscuits
4 teaspoons flaxseeds

Method

  1. Scoop out the flesh of the avocados and place in a bowl. Add the lime juice, coconut oil, honey and half the desiccated coconut and crush well until smooth (alternatively, you can process them in a blender).
  2. Scoop the mixture into 4 small glasses or ramekins, making sure there’s at least a 2 cm gap at the top. Refrigerate for 2–4 hours.
  3. When ready to serve, crumble the biscuits and sprinkle them over the top of each one, along with the reserved coconut, lime zest and some flaxseeds to make a crunchy layer. Serve immediately.

Clever combination:

  • The ingredients come together to make this pretty much an essential fatty acid supplement. Coconut oil is rich in medium-chain triglycerides; avocados are rich in omega 3, 6 and 9; flaxseeds contain ALA omega 3.
