The amount of sugar and grisly ingredients that go into shop-bought lollies makes the mind boggle, but these are clean, straightforward, nutrient-dense and taste delicious. Perfect for a sweet boost on a hot summer day.

Ingredients

Quantity Ingredient
300g fresh blueberries
400ml coconut milk
150g live probiotic yoghurt
1 tablespoon runny honey
1/4 lime, juiced

Method

  1. Place all the ingredients in a blender and process to a smooth purée. Pour into ice lolly moulds, add the lolly sticks and freeze overnight.

Star ingredient:

  • Most of us have heard that coconut contains saturated fat. But saying that all saturated fat is bad for you is a bit like saying all cars are silver; in fact, they vary, and the fats in coconut are medium-chain triglycerides (MCT), which are broken down very quickly by enzymes secreted by the lining of the blood vessels, and can be used as an efficient energy source. That means they’re very unlikely to be stored by the body or cause any problems in the cardiovascular system.
