Coconut cod curry with fried brown basmati

This is a great recipe for a wet Saturday evening, when you can take your time in the kitchen and enjoy all the wonderful aromas and textures while you cook it.

Ingredients

Quantity Ingredient
olive oil, for cooking
1 onion, grated
2 teaspoons fresh ginger, grated
2 red chillies, finely chopped, seeds left in
4 garlic cloves, finely chopped
2 large tomatoes, very finely chopped, any juice retained
2 teaspoons garam masala
1/2 teaspoon cumin seeds
1 teaspoon cinnamon
400ml coconut milk
200ml vegetable stock
4 large cod fillets
240g brown basmati rice
1 red onion, finely chopped
1/2 teaspoon turmeric
100g garden peas
sea salt
black pepper

Method

  1. Heat a little olive oil in a pan, add the onion, ginger, chillies and garlic and cook for 4–5 minutes, until it forms a dark paste. Add the tomatoes and any juice and cook for 5 minutes. Add the garam masala, cumin and cinnamon and cook for 2 more minutes. Add the coconut milk and stock, bring to the boil and add the cod. Simmer for 4–5 minutes, or until the cod has cooked through. Season with salt and pepper.
  2. Meanwhile, cover the rice with boiling water and simmer for 20 minutes, or until just tender. Drain well. Heat a little olive oil in a pan, add the onion and cook for 4–5 minutes, until softened. Add the turmeric and peas and cook for a further 3 minutes. Add the cooked rice, season with salt and pepper and stir well.
  3. Place a mound of the rice in the centre of each plate. Place the cod on top, cover with curry sauce and serve immediately.

  • Type 2 diabetes; high blood pressure and high cholesterol

Star ingredient:

  • Brown basmati is at the top of the rice tree. It has the lowest glycaemic impact, so it maintains blood sugar slowly, helping stabilise energy levels and curb inflammation.
