Green curry salmon burgers with edamame quinoa

This oozes sophistication, looks stunning and is great for parties, plus you know it’s going to be doing you real good. Edamame beans are available frozen in most supermarkets (they’re sometimes called soya beans).

Ingredients

Quantity Ingredient
4 skinless salmon fillets, cubed
2 garlic cloves, finely chopped
1-2 tablespoons thai green curry paste
2 limes, juiced, plus wedges to serve
200g quinoa
150g edamame beans, thawed if frozen
large bunch fresh coriander, coarsely chopped, plus extra to garnish
olive oil, for frying
sea salt
black pepper

Method

  1. Place the salmon, garlic, curry paste and half the lime juice in a food processor, season with salt and process into a smooth, mince-like texture. Remove the mixture, divide in half, and, using your hands, form 4 burger-patty shapes. Set aside in the fridge to firm up slightly.
  2. Meanwhile, place the quinoa in a saucepan, cover with boiling water and simmer for 10–15 minutes, or until just tender. Drain the quinoa and stir in the edamame beans, remaining lime juice and chopped coriander and season with salt and pepper. Stir well and set aside.
  3. Heat a little olive oil in a frying pan, add the salmon burgers and fry for about 5 minutes on each side.
  4. Place some quinoa in the centre of each plate (you could use a ring mould if you have one). Place the burger on top and garnish with a sprig of coriander and a lime wedge. Serve with a green salad, cooked broccoli or coleslaw.

Star ingredient:

  • Coriander contains essential oils that can ease bloating and wind. Some experiments on animals have also suggested that compounds in coriander may help stimulate the release of insulin.
