This is perfect for munching at your desk, eating al fresco in the park, or wherever else you find yourself at lunchtime! It’s tasty and filling and will keep your energy levels consistent throughout the day. You can buy pre-cooked salmon from the supermarket to save time.

Ingredients

Quantity Ingredient
1 wholemeal tortilla wrap
1 tablespoon tahini
1/2 lemon, juiced
1 salmon fillet, cooked
large handful mixed salad leaves
sea salt
black pepper

Method

  1. Lay the tortilla wrap out flat and spread the tahini over it. Squeeze the lemon juice over the tahini.
  2. Flake the salmon into pieces and scatter them over the tahini. Season with salt and pepper, then put the mixed leaves on top. Roll up the tortilla and cut it in half. Eat immediately, or wrap in clingfilm and store in the fridge until needed.
  3. This is best made and eaten the same day, but if you prefer you could mix the tahini and lemon and take it along with the salmon, tortilla and leaves separately, then wrap and assemble it at work.

Star ingredient:

  • Tahini is a super-rich source of thiamin, A.K.A. vitamin B1, which is essential for the health of the nervous system. It’s great for bone health, since it has good levels of calcium and is rich in magnesium and copper, which are important for laying down bone. It also contains two lignan compounds called sesamin and sesamolin, which can help reduce cholesterol.
