Chicken and pink grapefruit powerhouse salad

This is a lovely dish that just shouts summer. It’s great when you want something light and virtuous, or have a large evening meal planned. You could use a pre-cooked chicken breast to make it even simpler.

Ingredients

Quantity Ingredient
1 large chicken breast
2 tablespoons olive oil, plus extra for drizzling
1 pink grapefruit
3 handfuls mixed watercress, rocket and baby spinach leaves
1/2 fennel bulb, very thinly sliced
1 teaspoon balsamic vinegar
1/4 teaspoon dried mixed herbs
sea salt
black pepper

Method

  1. Preheat the oven to 200°C. Place the chicken breast on a baking tray, drizzle with a little olive oil, season with salt and pepper and cook for 25–30 minutes, until just cooked through. Allow to cool.
  2. Meanwhile, peel and segment the grapefruit. To do this, cut the skin off with a sharp knife to reveal the flesh, moving the knife downwards and curving around the fruit to keep its shape. Cut into the fruit between the thin white membranes to release the segments, reserving any juices. Remove the skin, then slice the chicken breast and put it in a bowl with the salad leaves and sliced fennel.
  3. Mix the olive oil, balsamic vinegar and herbs, whisking vigorously to emulsify. Season with salt and pepper. Place the grapefruit segments on top of the salad and drizzle over the dressing. Serve immediately. If you’re packing a lunchbox, mix the chicken, fennel and grapefruit with the dressing and put it in the bottom of the box, then put the leaves on top. Store in the fridge and mix them together just before eating.

  • Pink grapefruits are packed with vitamin C, and their gorgeous pink colour comes from lycopene, which is thought to reduce cholesterol oxidation and benefits the health of the prostate gland. They’re also rich in limonenes, which help protect cells from damage.
