I’ve been fortunate enough to spend a great deal of time in Japan, where I fell in love with cold soba noodles. They can now be found in any supermarket and are ready in a matter of minutes.

Ingredients

Quantity Ingredient
100g dried soba noodles
1 garlic clove, finely chopped
1 teaspoon runny honey
2 teaspoons soy sauce
3 teaspoons sesame oil
1 tablespoon olive oil
6 cherry tomatoes, halved
1/4 cucumber, sliced into strips
1/2 carrot, grated
1/4 red onion, finely sliced
1 teaspoon sesame seeds, toasted
large sprig fresh coriander, (optional)

Method

  1. Bring a pan of salted water to the boil, add the soba noodles and boil for 10 minutes, or until soft.
  2. Make the dressing by blending together the garlic, honey, soy sauce, sesame oil and olive oil.
  3. Drain the noodles well and and put them in a bowl along with the tomatoes, cucumber, carrot and onion, and stir well. Drizzle the dressing over the noodles and toss well to combine. Sprinkle with sesame seeds and coriander leaves, if using. This is one you can dress in advance and take in your lunchbox just as it is.

  • Blood vessel health and high blood pressure; digestive health

Star ingredient:

  • Soba noodles are made from buckwheat, a great source of the phytochemical rutin. This can help strengthen blood vessel walls against damage, which can lead to atheroma (obstruction of the blood vessels).
