This is great for those days when you need to throw some lunch together at a hundred miles an hour, but still want proper food. It has lots of flavour and texture.

Ingredients

Quantity Ingredient
400g tinned chickpeas, drained
1 handful fresh parsley, chopped
1 handful fresh dill, chopped
1/4 cucumber, diced
7-8 cherry tomatoes, quartered
2 spring onions, chopped
4 tablespoons orange juice
1 tablespoon olive oil
1 teaspoon balsamic vinegar
sea salt
black pepper

Method

  1. Put the chickpeas in a bowl with the chopped herbs, cucumber, tomatoes and spring onions, and stir well.
  2. Whisk together the orange juice, olive oil and balsamic vinegar to make a luscious dressing. Pour over the salad, season with salt and pepper and serve immediately, or pack in a lunchbox and store in the fridge until ready to eat.

  • High cholesterol nad heart health; PMS and menopausal issues; weight management

Star ingredient:

  • Chickpeas are a great source of isoflavones: compounds that are thought to have a beneficial effect on issues such as PMS and some menopausal symptoms, as they may be able to mask oestrogen deficiency problems, although the jury is still out on that. They also seem to help appetite control and cardiovascular health.
