This feels really decadent, yet is very rich in nutrients. It’s a simple, powerful breakfast that will keep you full for hours: eggs for protein and leeks as a great prebiotic to help boost the good bacteria.

Ingredients

Quantity Ingredient
1 small leek
olive oil, for frying
3 eggs
1 large slice smoked salmon
sea salt
black pepper

Method

  1. Slice the leek into thin rounds. Heat a little olive oil in a large pan, add the leek and cook for 4–5 minutes, until softened.
  2. Meanwhile, crack the eggs into a bowl and whisk them well. Season with salt and pepper. Add the eggs to the leeks and stir gently, keeping the mixture moving, to make a lovely leek-filled scramble.
  3. Place the smoked salmon slice in the centre of your serving plate, and pile the leek scramble on the top of it.

  • It’s all about the oily fish here. Salmon is packed with omega-3 fatty acids, which are so often deficient in our modern diets. Research indicates that omega 3 helps improve cholesterol levels, reduce inflammation and improve mood.
