Spinach and feta scramble

This makes for a gorgeous start to the day, and contains three of my favourite ingredients in one hit. It’s dense in nutrients and guaranteed to keep you going until lunchtime.

Ingredients

Quantity Ingredient
1/2 tablespoon olive oil
2 handfuls baby spinach
2 large free-range eggs
100g feta cheese, cubed
small bunch fresh chives, finely chopped
sea salt
black pepper

Method

  1. Heat the olive oil in a pan over a medium heat, add the spinach and cook for 3–4 minutes, or until wilted.
  2. Crack the eggs into a bowl, season with salt and pepper and whisk them together. Pour them into the pan with the spinach and add the cubed feta. Stir gently over a medium-low heat until the eggs have scrambled. Sprinkle with the chopped chives and serve immediately.
