Baked spiced apple wedges with heart-healthy compote

This is a lovely, summery dessert that’s sweetly satisfying, yet incredibly virtuous.

Ingredients

Quantity Ingredient
2 golden delicious apples
2 teaspoons maple syrup
1 teaspoon ground cinnamon
150g fresh blueberries
1/2 red chilli, deseeded and finely chopped
handful pecan nuts, roughly chopped, to serve (optional)
live probiotic yoghurt, to serve

Method

  1. Preheat the oven to 200°C. Cut the apples into eighths, without peeling them, and remove the seeds and fibrous part around the seeds.
  2. Place the apple wedges on a baking tray and bake in the oven for 15 minutes. Remove the tray from the oven, drizzle the wedges with maple syrup and sprinkle with cinnamon. Return to the oven for another 15–20 minutes, or until soft and bubbling.
  3. To make the blueberry compote, place the blueberries in a pan with 1 tablespoon water and the chilli. Cook over a high heat for 4–5 minutes, or until the blueberries begin to release their juices and break down into a compote. Pour the compote over the baked apple wedges and sprinkle with the chopped pecans, if using. Serve with a dollop of yoghurt.
