Spicy oven-baked potato wedges

Whenever I make these, they barely hit the serving plate before they disappear. They are so easy, older kids can cook them after school. The hardest part is waiting for them to be ready.

Ingredients

Quantity Ingredient
60ml olive oil
1 teaspoon sea salt flakes, plus extra to serve
1 teaspoon grated lemon zest
1/2 teaspoon freshly ground black pepper
1/2 teaspoon dried oregano
1/2 teaspoon cayenne pepper, or to taste
5 medium floury potatoes, about 900 grams

Method

  1. Preheat the oven to 220°C. Put 2 baking trays in the oven to heat.
  2. In a large mixing bowl, combine the olive oil with the sea salt flakes, lemon zest, pepper, oregano and cayenne pepper.
  3. Wash the potatoes well and cut them into halves lengthways, then cut each half into 4 long wedges. Dry them on paper towel, then add to the mixing bowl and toss until all the wedges are coated with the spicy oil.
  4. Line the hot baking trays with baking paper and divide the wedges between the 2 trays, cut side down. Pour any oil that remains in the mixing bowl over the wedges.
  5. Bake, turning once, until the wedges are golden, about 25–30 minutes.
  6. Tip them onto a plate and serve immediately, sprinkled with sea salt flakes.
