Toasty roast potatoes

You could have these as a side, or treat yourself and make them as a snack, perfect on a wintery afternoon. After school or after work, these will warm you up from the inside out.

Ingredients

6 medium floury potatoes, about 1 kg
1 teaspoon salt, for the cooking water
60 grams melted butter
1 teaspoon curry powder
1/2 teaspoon sea salt
1/2 teaspoon cayenne pepper, or to taste
1/4 teaspoon freshly ground black pepper

Method

  1. Preheat the oven to 210°C. Adjust the oven racks so there is one at the top of the oven and one at the bottom. Put 2 baking trays in the oven to heat.
  2. Peel the potatoes and cut each in half lengthways. Cut each half into 2–3 pieces, depending on the size of the potato, making all the pieces a similar size.
  3. Put the potato pieces and the salt in a medium saucepan and cover with cold water. Bring to the boil over medium–high heat and boil until just tender, about 15 minutes, testing with the point of a sharp knife. Drain the potatoes and return to the saucepan over low heat for 1 minute to ensure any excess water has evaporated. To rough up the edges, carefully stir the potatoes with a large metal spoon so they bash against each other.
  4. Melt the butter in a small saucepan over medium heat. Pour the melted butter over the potatoes, turning carefully with a large metal spoon until all the potatoes are coated in butter.
  5. In a small mixing bowl, stir together the curry powder, sea salt, cayenne pepper and pepper. Sprinkle this mixture over the buttered potatoes and turn them until they are coated in the spice mix.
  6. Remove the hot trays from the oven and line them with baking paper. Place the potatoes onto the trays and into the oven.
  7. Bake until the potatoes are golden and crisp, about 45–50 minutes, turning them and swapping the trays after about 30 minutes.
  8. Place the potatoes in a serving dish, sprinkle with sea salt flakes and serve immediately.
