This soup is as nourishing as it sounds, and completely delicious. Miso, the savoury paste made from fermented soybeans, is the perfect balance for the sweet potato. For the meat eaters, some shredded cooked chicken added to the individual serving bowls makes a tasty addition.

Ingredients

1 tablespoon olive oil
1 medium onion, diced
1 celery stalk, sliced
1 large carrot, halved lengthways and sliced
2 garlic cloves, sliced
2 teaspoons fresh grated ginger
1.5 litres vegetable stock
1 large orange sweet potato, peeled and chopped, (about 650 g)
2 medium zucchini, halved lengthways and sliced
2 tablespoons white miso paste
2 teaspoons soy sauce

To serve

2 teaspoons sliced fresh chives
1 teaspoon sesame oil

Method

  1. Heat the olive oil in a large saucepan over medium heat and cook the onion, celery and carrot until soft, stirring occasionally, about 10 minutes. Stir in the garlic and ginger and cook until fragrant, about 2 minutes. Add the stock, sweet potato and zucchini and bring to the boil. Reduce the heat to medium–low and simmer until the vegetables are tender, about 20 minutes.
  2. Take the soup off the heat and blend with a hand-held blender until smooth. Return to medium heat until bubbling. Remove the soup from the heat.
  3. Whisk the miso paste with 80 ml of water until smooth and stir through the soup with the soy sauce.
  4. Serve in individual bowls, sprinkled with chives and a dribble of sesame oil.
