These little balls are smooth, chocolatey, rich and delicious – and, surprisingly, contain no cream or flour. If you’d rather not roll them in coconut, crushed walnuts also taste fantastic.

Ingredients

3 small floury potatoes, peeled and cut into 2 cm pieces, about 300 grams
1/4 teaspoon salt, for the cooking water
200 grams dark chocolate (70% cocoa), chopped into small pieces
2 tablespoons coconut oil
2 tablespoons cold brewed coffee
2 tablespoons maple syrup
1/4 teaspoon sea salt
45 grams dessicated coconut

Method

  1. Put the potatoes and salt in a small saucepan and cover with cold water. Bring to the boil over medium–high heat and boil until very tender, about 12 minutes, testing with the point of a sharp knife. Drain the potatoes and return to the saucepan over low heat for 1 minute to ensure any excess water has evaporated. Put through a ricer or mash well until very smooth.
  2. Pour 2 cm of water into a small saucepan over medium–low heat. Put the chocolate and coconut oil in a heatproof bowl and sit the bowl on top of the saucepan, making sure it doesn’t touch the water. Stir until the chocolate is smooth and glossy. Remove the bowl and place it on a tea towel on a work surface, taking care as the bowl may be hot. Mix in the coffee, maple syrup and sea salt until smooth.
  3. Measure 230 grams of mashed potato into a medium mixing bowl. Pour half of the chocolate mixture over the mashed potato and stir well with a wooden spoon. Add the remaining chocolate mixture and beat until very smooth.
  4. Place the desiccated coconut on a plate.
  5. Roll tablespoons of the chocolate into balls between your hands and place them on the coconut. Roll the balls in the coconut until all sides are coated, then place on a clean plate and into the refrigerator to set.
  6. Serve with coffee or tea after dinner for an elegant treat.
  7. Store in an airtight container in the refrigerator for up to 3 days.
