This whole spice blend is available in Asian spice shops already mixed, so you don’t actually need to make your own. Panch poran does vary from region to region in the subcontinent but this is the most common blend in UK curry houses.

Some cooks prefer to use less fenugreek as the seeds can be quite bitter. You’ll have to experiment with that one.

cumin seeds
fenugreek seeds
brown mustard seeds
fennel seeds
nigella seeds (black onion seeds)

Method

  1. For best results, roast the spices in a dry frying pan over a medium-high heat until fragrant. I usually roast them just before using.
