3 oranges, (choose brightly coloured ones)

Method

  1. Preheat the oven to 90°C. Zest the oranges onto a silicone mat set on a flat baking tray. Spread the zest out evenly.
  2. Bake for 35 minutes, or until the zest is completely dried out and will crumble to a powder in your fingers.
  3. Leave to cool to room temperature, then crumble with your fingers as finely as possible, into a completely dry airtight container. This powder should always be stored with the lid on, because it will absorb moisture readily. Seal the container well; the powder can be stored in a cool dark place for up to 1 week.
