100g compressed seedless tamarind pulp, in block form

Method

  1. Place the tamarind in a bowl with 100 ml water. Mash together with your hands, then leave to sit for 30 minutes, to allow the tamarind to rehydrate.
  2. Push the tamarind pulp through a fine sieve, discarding the fibrous pulp. The liquid is now ready to use.
  3. (You can make larger quantities of tamarind water if needed; the general rule is to rehydrate the tamarind paste in an equal quantity of water.)
