Ingredients

Quantity Ingredient
100g plain flour
150g icing sugar
4 egg whites
45ml melted butter
1/2 vanilla bean, split lengthways and seeds scraped

Method

  1. Preheat the oven to 160°C and line a baking tray with a non-stick baking mat or baking paper.
  2. Sift the flour and icing sugar together. Slowly fold in the egg whites, then fold in the melted butter and vanilla seeds. Chill for 30 minutes, until spreadable.
  3. Use a palette knife to smear random shapes of even thickness on the baking tray. Bake for 10 minutes, or until golden and crisp.
  4. Leave on the baking tray to cool, then break to your desired size. Can be made a day in advance, but must be stored in an airtight container until required.
