This sauce makes the Theo burger what it is, and is also used for mixing through the pulled pork burger.

Ingredients

Quantity Ingredient
50ml vegetable oil
1/2 onion, finely diced
1 tablespoon crushed fresh garlic
125ml malt vinegar
125ml worcestershire sauce
1 tablespoon mustard powder
2 tablespoons dark brown sugar
2 tablespoons sweet paprika
1 tablespoon salt
2 tablespoons chipotle chilli powder
250ml tomato sauce

Method

  1. Heat a saucepan over a medium heat. Add the oil, then sweat the onion and garlic for about 4 minutes, or until translucent but not coloured.
  2. Stir in all the remaining ingredients, except the tomato sauce. Simmer over a medium–low heat for about 15 minutes, or until the sauce has thickened slightly.
  3. Add the tomato sauce and cook for 5–10 minutes, or until a sauce-like consistency is reached. Make sure you stir frequently so the sauce doesn’t catch.
  4. Leave to cool, then blend using an upright blender or hand-held blender. Store in an airtight container in the fridge for up to 1 month.
