Onions have a lot of sugar in them and when cooked slowly, they caramelise and become very sweet. They go beautifully with just about any meat.

Ingredients

Quantity Ingredient
30g butter
2 large brown onions, thinly sliced
50ml balsamic vinegar

Method

  1. Heat a saucepan over a medium heat and add the butter. Once the butter has melted and is sizzling slightly, add the onion and a little salt and freshly ground black pepper.
  2. Turn the heat down to low and cook for about 20 minutes, stirring frequently, until the onion has turned golden and caramelised.
  3. Stir in the vinegar and cook for a further 5–10 minutes, until the mixture has reduced and thickened.
  4. Check the seasoning and place in an airtight container. Store in the fridge for up to 1 month.
