Cherries are such a luxurious fruit, perfectly suited to a ketchup. This one goes amazingly well with foie gras.

Ingredients

Quantity Ingredient
100g drained tinned cherries
125g whole peeled tomatoes
95g light brown sugar
125ml malt vinegar
1 cinnamon stick
2 star anise

Method

  1. Place all the ingredients in a non-reactive saucepan and cook over a medium heat for 10–15 minutes, or until the mixture starts to thicken slightly.
  2. Remove the spices, then purée to a ketchup consistency using a hand-held blender. Season to taste with salt and allow to cool.
  3. Store in an airtight container in the fridge for up to 1 month.
