This is really more of a relish than a jam. It is slightly sweet, but the bite of the mustard balances it well. This goes well on cold meats too.

Ingredients

Quantity Ingredient
2 tablespoons vegetable oil
2 tablespoons brown mustard seeds
4 onions, thinly sliced
4 garlic cloves, crushed
330ml dark beer
125ml malt vinegar
90g brown sugar
1 tablespoon mustard powder
1 bay leaf

Method

  1. Heat a non-stick saucepan over a medium heat and add the oil. Add the mustard seeds and let them pop for a moment, then add the onion and garlic. Sprinkle the onions and garlic with a couple of pinches of salt and freshly ground black pepper.
  2. Cook, stirring frequently, for about 5 minutes, or until the onion starts to soften. Add the remaining ingredients and simmer over a low heat for about 20 minutes, until the mixture starts to thicken.
  3. Remove the bay leaf, season to taste, then place in an airtight container to cool.
  4. Store in the fridge for up to 1 month.
