I love tartare sauce – it is so delicious with fish and seafood in general. I like it to be quite chunky, so you get the bite of the gherkins, shallots and capers against the richness of the mayonnaise.

Ingredients

Quantity Ingredient
1 quantity Basic mayo
45g gherkins, finely diced, plus 2 tablespoons of the gherkin pickling juice
45g capers, finely chopped
4 french shallots, finely diced
2 eggs, hard-boiled and pushed through a sieve
3 tablespoons flat-leaf parsley, thinly sliced

Method

  1. Mix all the ingredients together. Keep in an airtight container in the fridge for up to 2 weeks.
