Bacon & egg burger

Vanessa came along with the opening of our city store. Given the number of corporate types rushing to work every morning past this store, we decided we needed a breakfast burger. You can use either ketchup or barbecue sauce on this one; we prefer barbecue sauce.

Ingredients

Quantity Ingredient
8 slices kaiserfleisch
4 free-range eggs
4 slices cheddar
4 Soft burger buns, cut in half
Clarified butter, melted, for brushing
Tomato ketchup
or Barbecue sauce
125g Bloody Mary mayo

Method

  1. Heat the oven to a low setting.
  2. Heat a flat grill plate, or a large non-stick frying pan, to a medium heat. Cook the bacon for 2–3 minutes on each side, until just crisp. Transfer to the oven to keep warm.
  3. Cook the eggs for about 2 minutes on the first side, then flip them over and put a slice of cheese on each. Cook for another 1 minute, then keep warm in the oven.
  4. Brush the insides of the buns with clarified butter and toast lightly on the grill, then build your burgers.

Build from the bottom, in this order:

  • Bun bottom → Ketchup or barbecue sauce → Bacon → Egg with cheese → Bun top, spread with bloody Mary mayo
