Clam po’ boy burger with jalapeño & Thai basil mayo

Po’ boys are originally from New Orleans, and usually feature either prawns or oysters, served in a long white roll. This is a burger version using clams. I love their texture and slight saltiness.

Ingredients

Quantity Ingredient
20 clams, cooked and removed from their shells
100ml buttermilk
or 100ml milk, with ½ teaspoon lemon juice added
vegetable oil, for deep-frying
4 Soft burger buns, cut in half
Clarified butter, melted, for brushing
4 iceberg lettuce leaves, washed, dried and thinly sliced
125g Jalapeño & Thai basil mayo

Spiced flour

Quantity Ingredient
1 teaspoon cayenne pepper
1 teaspoon ground turmeric
3 teaspoons sweet paprika
2 teaspoons salt
3 teaspoons ground cumin
1 teaspoon chinese five-spice
3 teaspoons ground coriander
2 teaspoons garlic powder
2 teaspoons onion powder
3 teaspoons ground sichuan pepper
2 teaspoons ground white pepper
150g plain flour

Method

  1. Soak the clams in the buttermilk for about 5 minutes or so, to add a nice flavour and help the flour stick when dredging.
  2. For the spiced flour, mix all the ingredients together in a large bowl and set aside.
  3. To serve, heat about 10 cm of oil in a large saucepan, to about 175°C. You can test by dipping a wooden chopstick in – the oil should sizzle when ready.
  4. Remove the clams from the milk in small batches. Toss well with the spiced flour, then shake off the excess using a sieve. Gently lower the clams into the oil and cook for 2–3 minutes, or until golden and crisp. Drain immediately on paper towel and keep warm. Repeat with the remaining clams.
  5. Meanwhile, heat a large non-stick frying pan, or flat grill plate, to a medium heat. Brush the insides of the buns with clarified butter and toast lightly on the grill, then build your burgers.

Build from the bottom, in this order:

  • Bun bottom → Lettuce → Jalapeño & Thai basil mayo → Clams → Bun top
