Grilled ham & pineapple burger with chipotle mayo

While most hamburgers have absolutely no ham anywhere near them, this is a real ‘ham’ burger. I guess it could be called a Hawaiian burger, as is usually the case whenever ham and pineapple are teamed up. The chipotle mayo adds a bit of spice and smokiness to complement the ham.

Ingredients

Quantity Ingredient
4 ham steaks, roughly the size of the burger buns if possible
vegetable oil, for brushing
4 slices fresh pineapple, core removed
4 Soft burger buns, cut in half
Clarified butter, melted, for brushing
125g Chipotle mayo
4 iceberg lettuce leaves, washed, dried and finely shredded

Method

  1. Heat a cast-iron grill plate, or frying pan, to a medium–high heat. Brush the ham steaks with a little oil and then cook for about 2 minutes on each side. Set aside and keep warm, then cook the pineapple in the same way.
  2. Meanwhile, heat a large non-stick frying pan, or flat grill plate, to a medium heat. Brush the insides of the buns with clarified butter and toast lightly on the grill, then build your burgers and dream of the sunny shores of Hawaii…

Build from the bottom, in this order:

  • Bun bottom → Chipotle mayo → Lettuce → Pineapple → Ham → Bun top
