Prawn togarashi burger with yuzu & sesame mayo

This is quite a light and refreshing burger. If you want to keep the flavours really clean and not so rich, you can leave the bun untoasted.

Ingredients

Quantity Ingredient
12 cooked prawns, peeled and deveined, tails removed
125g Sesame & yuzu mayo
4 Soft burger buns, cut in half
Clarified butter, melted, for brushing
1 tablespoon togarashi
4 iceberg lettuce leaves, washed, dried and thinly sliced

Method

  1. Toss the prawns with the mayo until well coated.
  2. Heat a flat grill plate, or a non-stick frying pan, to a medium heat. Brush the insides of the buns with clarified butter and toast lightly on the grill, then build your burgers.

Build from the bottom, in this order:

  • Bun bottom → Lettuce → Prawns → A sprinkling of togarashi → Bun top
