I fell in love with Reubens when I was living in Michigan… but then when I lived in New York, I was a stone’s throw from Katz’s Deli – the home of the mother of all Reubens! This one is a little lighter on the meat than theirs. She’s a saucy one, but also super tasty.

Ingredients

Quantity Ingredient
2 tablespoons vegetable oil
600g thinly sliced corned beef
150g sauerkraut, drained of excess juice
8 slices swiss cheese
4 Soft burger buns, cut in half
Clarified butter, melted, for brushing
250ml Thousand Island dressing

Method

  1. Preheat the oven to 175°C. Line a baking tray with baking paper.
  2. Heat a flat grill plate, or a large non-stick frying pan, to a medium heat. Add the oil, then gently cook the corned beef until it is warmed through.
  3. Meanwhile, place the sauerkraut in a small saucepan and warm it through.
  4. Separate the warmed corned beef into four equal piles, about the same circumference as the buns. Place a slice of cheese on top of each mound, top with the sauerkraut, then top each with another slice of cheese. Place the tray in the oven for 3–4 minutes, or until the cheese has melted.
  5. While the beef is in the oven, brush the insides of the buns with clarified butter and toast lightly on the grill, then build your burgers.

Build from the bottom, in this order:

  • Bun bottom → Thousand island dressing → Corned beef, Swiss cheese & sauerkraut stack → Thousand island dressing → Bun top
