Cuete en salsa de cacahuate

Ingredients

Quantity Ingredient
1kg whole topside steak
2 carrots
1 brown onion
1 bay leaf
2 chicken stock cubes
2 slices bread, toasted
1/2 cup oil
2 ripe tomatoes
3 whole cloves
1/2 teaspoon ground pepper
1 cinnamon stick
pinch salt
1 cup peanuts

Method

  1. Place meat in a large saucepan and add water to cover. Add carrots, onion and bay leaf.
  2. Bring to the boil, then reduce heat and simmer for around 1½ hours or until meat is tender. Reserve 1¼ cups
  3. Reserve 1¼ cups of the meat stock and dissolve the chicken stock cubes into it.
  4. In a blender or food processor, blend the toasted bread, oil, tomatoes, cloves, pepper, cinnamon and salt.
  5. Add nuts and stock and continue to blend until the sauce is smooth.
  6. Pour sauce into a deep saucepan and bring to the boil slowly.
  7. Slice the meat thinly (about 5 mm thick) and add to the hot sauce. Reduce heat to simmer and allow the meat to heat through (around 5 minutes).
  8. Serve with white rice.
