Ingredients

Quantity Ingredient
3 ripe avocados
3 tablespoons olive oil
salt and pepper
1 tomato, finely chopped
2 tablespoons red onion, finely chopped
3 tablespoons coriander, chopped
1 small chilli, chopped, (optional)

Method

  1. Peel avocados and mash well in a bowl. Don‘t throw the seeds out.
  2. Add the olive oil, salt and pepper and combine well.
  3. Add the tomato, onion, coriander and chopped chilli (if using).
  4. Place the avocado seeds on top of the mixture until you are ready to serve (this will help keep the avocado from turning brown).
  5. Store in the fridge.
  6. Great with corn chips or as a sauce over tacos and tortillas.
