Huevos en chipotle

Ingredients

Quantity Ingredient
1 1/2 cups kidney beans, cooked
1/2 cup water
8 eggs
salt
8 slices mild cheese
2 chipotle chillies
2 tablespoons coriander
tortillas, for serving

Method

  1. Preheat oven to 180°C.
  2. In a saucepan, mix beans and water, mashing until smooth.
  3. Heat beans over a medium heat until bubbles appear. Turn heat off and place the beans into an ovenproof dish.
  4. Crack open the eggs on top of the beans. Sprinkle with salt and top each egg with a slice of cheese.
  5. Slice the chillies and arrange on top of the cheese.
  6. Finally, sprinkle coriander over the top and bake in the oven for 10–12 minutes or until eggs are cooked, but the yolks are still soft.
  7. Serve with hot tortillas.
