Ingredients

Quantity Ingredient
4 tomatoes, chopped
2 onions, finely chopped
1/2 cup coriander, chopped
4 fresh or bottled chillies
1/2 cup plus 1 tablespoon oil
1/2 cup chicken stock
salt
12 fresh tortillas
12 eggs

Method

  1. Prepare the sauce first by blending the tomatoes, onion, coriander and chillies.
  2. Fry this sauce in 1 tablespoon of the oil, adding the chicken stock and salt and simmering for 2 minutes.
  3. In a separate frying pan, heat ½ cup of oil.
  4. Fry tortillas one at a time, only for a few seconds each. Use tongs to lift out.
  5. Arrange the tortillas on individual plates (two per plate). Set aside.
  6. Using the same (still hot) oil from the tortillas, fry the eggs. Place one egg on each of the tortillas. Pour a tablespoon of the hot sauce on each egg and serve immediately with beans.
