Ingredients

Quantity Ingredient
2 tablespoons butter
1/4 onion, finely chopped
1 small chilli
1 tomato, finely chopped
salt
4 eggs
2 tablespoons milk
tortillas, for serving

Method

  1. Melt butter in a large pan. Sauté the onion for 1 minute, then add the chilli, tomato and salt.
  2. Cook for 2 minutes, stirring constantly.
  3. Beat the eggs and the milk until well combined.
  4. Add to the pan and continue stirring until eggs are cooked through.
  5. Serve with hot tortillas.

Variation:

  • For Huevos revueltos con frijoles (eggs with beans), omit the chilli and serve with hot mashed kidney beans and salsa verde.

    You can also add chorizo for a meat lover‘s breakfast!
