Ingredients

Quantity Ingredient
1/4 cup olive oil
1/2 onion, finely chopped
2 see method for ingredients, fresh or bottled
2 garlic cloves, finely chopped
3 ripe tomatoes, chopped
1 teaspoon oregano
salt and pepper
500g shelled, raw prawns
1kg puff pastry sheets
1 beaten egg yolk

Method

  1. Preheat oven to 190°C.
  2. In the heated oil, sauté the onion and chillies, adding the garlic, tomato, oregano, salt and pepper. Cook for 2 minutes.
  3. Chop the prawns finely and add to the pan, cooking for a further minutes or until just cooked. Set aside.
  4. Cut rounds of puff pastry, approximately 15 cm in diameter. Place a tablespoon of prawn mixture into the centre of each round. Fold pastry and seal edges by moistening and pressing them together.
  5. Arrange pastries on a greased oven tray. Brush the tops with egg yolk and bake for 15 minutes, or until golden brown and puffed up nicely.
