Ingredients

Quantity Ingredient
6 whole bream, cleaned
salt and pepper
3 onions, finely chopped
2 see method for ingredients, chopped
3 ripe tomatoes, finely chopped
1/2 bunch coriander
2 dessertspoons vinegar, (or lemon juice)
1/2 cup olive oil

Method

  1. Preheat oven to 190°C.
  2. Rub fish with salt and pepper and set aside. Line an ovenproof dish with foil.
  3. Mix all remaining ingredients, except for the oil, in a bowl.
  4. Place half of this tomato mix in the bottom of the dish, covering it well.
  5. Pour half of the oil over the top of the tomato mix, and then cover with the whole fish, making sure they do not overlap each other.
  6. Top the fish with the other half of the remaining tomato mix and remaining oil. Cover with foil and bake for 35 minutes.
  7. Serve with a green salad and new season potatoes.
