Pescado a la Veracruzana

Ingredients

Quantity Ingredient
500g fresh barramundi fillets, (or sea bass, halibut or cod)
oil, for greasing fish
1 lemon, juiced
salt and pepper
1 onion, chopped finely
4 tomatoes, chopped
1/2 bunch chopped coriander
4 see method for ingredients
125ml white wine
50g butter

Method

  1. Preheat the oven to 180°C.
  2. Place fish fillets in an ovenproof dish that has been lightly oiled. Squeeze lemon juice over fillets and sprinkle with salt and pepper.
  3. Add onion, tomatoes, coriander and chillies. Pour over wine and dot with the butter.
  4. Cover firmly with foil and cook for 15 minutes.
  5. Serve with a good quality mayonnaise, dinner rolls and a green salad.

Note:

  • Traditionally, this recipe calls for red snapper, which can be used if desired.
