Ingredients

Quantity Ingredient
1 x 3kg whole turkey
small amount of butter, for greasing turkey
salt and pepper
3 chicken stock cubes
100g butter
250ml white wine
125ml white vinegar
4 onions, thickly sliced
6 bay leaves
2 teaspoons dried thyme
1/2 teaspoon freshly ground pepper

Method

  1. The night before:

    Rub turkey with butter, salt and pepper (also rubbing the inside).
  2. Cover with foil and refrigerate.
  3. The next day:

    Preheat oven to 200°C.
  4. Place turkey on a roasting tray.
  5. Mix chicken stock cubes with the 100 g butter to make a paste, and carefully rub the turkey with this mixture. Gently lift the skin next to the breast, and spread the butter evenly between skin and breast.
  6. Make sure some of the butter mixture goes inside the bird to ensure an even distribution of flavour.
  7. Pour the wine and vinegar over the turkey. Sprinkle the onions, bay leaves, thyme, salt and pepper over the top.
  8. Cover turkey loosely with foil and cook for 1 hour, basting occasionally.
  9. Bring the oven temperature down to 190°C and bake for a further 1½ hours, or until the turkey is cooked.
  10. Remove the foil 30 minutes before the cooking time is over to allow it to brown.
  11. Serve with roasted vegetables.
