Ingredients

Quantity Ingredient
12 pieces chicken, (thighs, wings, breasts or drumsticks can be used)
1/2 onion, finely chopped
1 large garlic clove
1/4 cup olive oil
125ml pale ale or lager beer
2 chicken stock cubes
2 oranges, juiced
1 teaspoon dried oregano
1/2 teaspoon thyme
1 cup see method for ingredients
2 tablespoons tomato paste
1 cinnamon stick
salt and pepper

Method

  1. Fry the chicken pieces in a deep pan with the onion and garlic in the olive oil until golden brown.
  2. Add the rest of the ingredients.
  3. Cook for 45 minutes (or 25 minutes if using chicken breast only) on a low heat, until the chicken is tender.
  4. Serve with rice and beans, or on its own with a green salad.
