Pollo en salsa de almendras

Chicken in almond sauce

Ingredients

Quantity Ingredient
1 chicken, cut into portions
50g butter
2 cups water
2 chicken stock cubes
1 cup see method for ingredients
2 garlic cloves
1/2 onion
100g raw almonds
3 peppercorns
1 bay leaf
salt and pepper

Method

  1. In a deep pan, brown the chicken pieces in the butter. Add water and stock cubes.
  2. Cover and simmer over a low heat for 15 minutes.
  3. Blend the tomato purée, garlic, onion and almonds until smooth.
  4. Add this sauce, as well as the peppercorns, bay leaf, and salt and pepper to taste, to the chicken.
  5. Cook for a further 30 minutes, or until tender and sauce is reduced.
