Ingredients

Quantity Ingredient
12 pieces chicken, (thighs, wings, breasts or drumsticks can be used)
salt and pepper
1/4 cup oil, for frying
500g onions
2 cups white wine
2 cups water
2 chicken stock cubes
2 bay leaves
1kg small or new potatoes, cubed
1 cup button mushrooms

Method

  1. Sprinkle chicken pieces with salt and pepper to season.
  2. Heat oil in a deep pan and fry the chicken until brown. Add onions, wine, water, stock cubes, bay leaves, potatoes and button mushrooms.
  3. Cook slowly for 25 minutes (if using chicken breast on its own) or 45 minutes (if using chicken thighs or other part of the bird).
  4. Serve with small dinner rolls or tortillas.
